Art 1st. -

Only are entitled to the appellation contrôlées “Gaillac” (wines white, red and rosy) and “Gaillac sparkling” (white and rosy wines) the wines which, answering the conditions hereafter enumerated, were collected on the territory of the following communes of the department of the Tarn: Canton of Albi: 

Arthès, Carlus, Castelnau-

Art 2. -

May 30, 1990) - to be entitled to the one of the controlled labels of origin referred to above, the wines must come from collected grapes with good maturity and present a minimum natural voluminal title alcoholometric of: - 10 p.100 for the white wines with controlled label of origin “Gaillac” and for the classified wines controlled “sparkling Gaillac”, method the second fermentation in bottles, and “Gaillac sparkling”, method gaillacoise gross and medium dry wine; - 10,5 p. 100 for the red and rosy wines with controlled label of origin “Gaillac”; - 11 p. 100 for the classified wines “sparkling Gaillac”, method gaillacoise, and white wines of controlled label of origin “Gaillac” supplied with the “soft” qualifier like for the white wines of label of origin “Gaillac first coasts”. To have the right to match their name of the “soft” qualifier, the white wines of controlled label of origin “Gaillac” and the classified wines controlled “sparkling Gaillac”, method gaillacoise, must present an acquired voluminal alcoholometric title minimal of 8 p. 100 and one sugar content residual minimal of 45 G per liter. Moreover, when the authorization of enrichment by dry sugaring is granted, the wines should not exceed a total alcoholometric title of: - 13 p. 100 for the wines with controlled label of origin “Gaillac”; - 13 p. 100 before possible addition of dose for the wines with controlled label of origin “sparkling Gaillac”, the second fermentation out of bottle; - 13,5 p. 100 for the wines with controlled label of origin “Gaillac first coasts”; - 14 p. 100 for the wines with controlled label of origin “sparkling Gaillac”, method gaillacoise (gross or medium dry wine); - 14,5 p. 100 for the white wines with controlled label of origin “sparkling Gaillac”, method gaillacoise, matched “soft” qualifier. However, the benefit of names referred to above can be granted to the wines of a total voluminal title alcoholometric higher than the limits referred to above and worked out without any enrichment, if the informant justifies of a certificate issued by the national Institute of the labels of origin of the wines and brandies, after investigation carried out into its request presented before the vintage of the vines concerned. Art 5. -

The “soft” wines being entitled to the appellation contrôlée “Gaillac” whose fermentation is slowed down or stopped by rackings and filtrations will not have to contain, at the time of the setting on sale for consumption, an amount of free sulphur dioxide higher than 25 milligrams per liter and a total sulphur dioxide amount higher than 300 milligrams per liter. Name “sparkling Gaillac” is reserved for the white and rosy answering the conditions above enumerated, and exclusively prepared wines, inside the surface of production above definite a second fermentation in bottles or by spontaneous fermentation of the wine in bottles known as “method gaillacoise”. The method gaillacoise consists of a catch of foam obtained out of bottle with the natural sugar of the wine without drawn-off liquid addition neither nor of dose. Art 8. -

The modified decree of March 21, 1938 defining the appellation contrôlées “Gaillac”, “Gaillac first coasts” and “Gaillac sparkling” is repealed.
